We’re holding a fundraiser tomorrow at work to raise some money to help rebuild our city after last month’s flood. I get really excited for events at yoga passage because it’s basically a full day of hanging out with my favorite people, doing my favorite things (yoga and compulsive planning) and supporting a good cause.
I usually catch a class right after work and today I requested all the twists my teacher could fit into 75 minutes. I left class feeling wrung out and noodly so yeah, mission accomplished. After puttering around the studio for a while, I came home to get started on dinner. But not before harrassing my Miles.
I had pizza on the brain, so I made a quick socca crust (1 c. chickpea flour, 3/4 c. water, salt, and seasonings), poured it into a small skillet greased with coconut oil, topped it with tomatoes, garlic, kale, cheddar and feta and threw it in the oven to bubble and boil. I love socca for it’s dense, beany texture – this isn’t your typical ‘crust’. It’s very filling and so simple to make.
